It Worked!

I did it.

I had another attempt at Lilly Pilly Jelly and it worked.

This time I followed Mariana's very specific instructions and made sure not to rush. It is amazing what can happen with a little more patience.


Look at the colour!

The texture is so much nicer than the first version. It holds together beautifully but without being too chunky.  I managed to get about 350ml of liquid so I needed 350g of caster sugar, as well as the juice of one lemon.

  4. I'm having a blogging break over the easter period, but couldn't resist a quick blog check. So pleased that I did. Congrats Bruise Mouse - a very big congrats! Yes, isn't the colour magnificent. You really need to see it straight from the jar to appreciate the jewel-like colour - it's so pretty. I like the way you've decorated the jar too. Just lovely. I hope you feel pleased with yourself; it can be a rather daunting exercise especially when it's all very unfamiliar. Your efforts have certainly paid off. Enjoy the fruits of your labour and I hope there will be more jelly or jam making ahead for you in the future.

  5. Dixiebelle, thanks. They do look lovely. The fruit on the tree is really ripening now.

    TMKW, so glad you decided to check over the long weekend. It is such a great feeling of accomplishment to make something from scratch. I certainly will enjoy and wish I could share some with you. The one in the photo was a gift and I have been told went fabulously well with a really sharp cheddar on some crackers. By the look of the tree, there will be some more in the pot very soon.

  7. CHFG, do it! I is really easy. I even have another lot straining waiting to be cooked up later today. It will be my fun reward for getting the paying work out of the way first.
