Super Easy Apple Cake

Following an abundance of apples earlier in the week, I came across this super easy, super yummy apple cake recipe. No creaming of butter and sugar necessary. Just melt the butter and add to the mix. I did make a few alterations once I realised that the apples I had put aside for the cake had been eaten. Late last year I was lucky enough to win a box of organic peaches that had a bit of bird damage so could not be sold at market. At the time, work was too crazy for me to do anything to them apart from wash, cut and freeze. These came in very handy as I added some of these to the one remaining apple. Also, I halved the sugar as the fruit is already super sweet.


The house smelt amazing and the cake tasted very fruity. I didn't even notice that there was half a cup less of sugar.



I would love to get some suggestions of other super easy, super yummy cakes.

  1. oh this looks lovely! I am wondering if it would work as well with pears? They have been more abundant and cheaper lately than apples. Great idea to halve the sugar, I often do that... and I love to melt the butter, seems to work better for me.

    I can give you a quick banana cake recipe : 1 cup sugar / 1 cup boiling water / 1 tbsp butter / 1/2 tsp bicarb soda / 2 big bananas mashed / 2 cups SR flour / 1 egg. Mix all in together. Bake 45mins 180C. Easy peasy and works every time! cheers Wendy

  2. duchess_declutter, I tried it earlier in the week with 1 apple and 1 pear and it was delightful. The pear was really soft so I think it added to the moistness of the cake.
    Thanks so much for the recipe. I will certainly give it a go. I have some bananas in the freezer that are pretty 'cake-ready'.

  3. I'm making a quick and easy chocolate sheet cake this evening. If it is really good I'll pass it along to you. Like this one you just melt and add to dry ingredients. Icing is easy too.

  7. Oh My Goodness...I made this cake...Your right, SO EASY! and SO YUM! I lathered it in butter and sprinkled heaps of cinnamen and sugar on top as soon as I took it out of the oven...Gave it a lovely crunchy texture...What a hit in the household this recipe was, I am going to use it as a base now and change the ingredients,I will try it with Pear and blueberries next instead of sultanas, and I would definetly half the sugar!!! THANKS AGAIN!
