When my parents' bought their house about just over 10 years ago they inherited a mango tree. At that stage it was pretty much just a stick that had been neglected over many years. The crops are slowly getting more and more fruitful and this summer has seen more than 40 fruit grow on the tree. This is way too many for my parents to eat by themselves so we are lucky enough to be the recipients of the extras.
Last week I had made a new batch of yoghurt and with 4 small sized mangoes sitting on the bench, there was really only one possibility: mango lassi. Topped off with a few sprigs of mint from the garden, my morning tea was complete.
Now I just need to wait for the rest to ripen.

ReplyDeleteI have one in a brown paper bag at the moment. Apparently putting an apple in there is supposed to speed things up a bit. We'll see.

ReplyDeleteSometimes Mum and Dad send some down for Christmas when they have overload. Awesome Christmas gift I think and when the parcel man arrives I can smell it before I even open the box!

That sounds like the most amazing Christmas pressie. Imagine how hard that is on the postie, having that incredible smell in the van and then having to hand it over to someone else.

Yum. My favorite kind of lassi. How fortunate you are to have a mango tree in your midst. That's something I dream of. It reminds me of our holiday in port Douglas. Enjoy.
